Jalapeno Cheese Bread

Ingredients:

– 1 package (1/4 ounce) active dry yeast – 1 cup warm water (110° to 115°) – 1/4 cup sugar – 2 tablespoons canola oil

– 1/2 teaspoon salt – 3 to 3-1/2 cups all-purpose flour – 2 cups shredded cheddar cheese – 1/2 cup finely chopped seeded jalapeno peppers

Method of preparation:

1. Mix yeast in warm water. In a large bowl, mix sugar, oil, salt, yeast, and 2 cups flour. Medium-speed beat until smooth. Mix in enough flour to make a stiff dough. Mix cheese and jalapeño.

2. Mix dough on a floured surface for 6-8 minutes until smooth and elastic. Turn once in an oiled basin to grease the top. Cover and rise in a warm place until doubled, about 1 hour.

3. Punch dough. Half and make loaves. Grease two 8x4-inch loaf pans. Let rise in a warm location for 40 minutes under kitchen towels until almost doubled.

4.  Start with a 350° oven. Bake 30–35 minutes till browned. Remove pans to wire racks to cool.
