How to Make Potato Milk

Ingredients:

– About 9 oz of peeled, raw potatoes, – 4 cups of water, – 2 tablespoons of blanched, ground almonds, – a pinch of salt, – 4 tablespoons of honey or a preferred alternative sweetener, – vanilla flavoring (optional).

Method of preparation:

1. Sprinkle 4 cups of water over peeled potatoes. After boiling, reduce the heat and simmer the water for 15 minutes.

2. Be sure potatoes are tender. Transfer to a blender pitcher or tall bowl after they're the right consistency.

3. Add almonds, salt, vanilla, and honey (or agave, maple, or erythritol).

4. Blend everything into a smooth liquid. Allow the potato milk to cool.

5. Pour the milk into a mason jar or glass bottle after cooling. Keep refrigerated for 4 days.
